Bok Choy Stir Fry with Garlic and Ginger

Ingredients:
- 1 large bunch of bok choy
- 1 tablespoon olive oil
- 3 cloves of garlic, minced
- 1 tablespoon grated ginger
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 1 cup sliced carrots
- 1/4 cup low sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Brown rice, for serving

Instructions:

1. Wash the bok choy and cut off the bottom of the stems. Separate the leaves and cut the stems into small pieces.

2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and grated ginger and sauté for 1-2 minutes until fragrant.

3. Add the bok choy stems, bell pepper, mushrooms, and carrots to the pan. Stir-fry for 3-4 minutes until the vegetables start to soften.

4. In a small bowl, mix together the soy sauce, honey, and rice vinegar. Pour the mixture over the vegetables and stir to combine.

5. Add the bok choy leaves to the pan and continue to stir-fry for an additional 2-3 minutes until the leaves are wilted.

6. Season with salt and pepper to taste.

7. Serve the bok choy stir fry over brown rice for a healthy and satisfying meal. Enjoy!
